Pesto Pizza with roasted red pepper, tomato and roasted corn

If I had to choose one food to eat for the rest of my life and cilantro didn’t count, I would probably choose pizza. Goat cheese is right up there too, but I would just put the goat cheese ON the pizza. In fact, I kind of can’t believe I didn’t put it onย this pizza. You could though. It would be delicious.

I mean, you really can’t go wrong with carbs and cheese. My two favorite food groups. Add in some homemade ricotta pesto, and you’ve got yourself a ridiculously easy and impressive homemade pizza for any day of the week!

The pesto and the corn are without a doubt my favorite part. I loved the pesto on it’s own, and on a pizza it got EVEN BETTER. Plus, I looooove roasted corn, especially in the summer. I seek it out on menus when I go out to eat, and put it in almost everything I make at home. Sweet and crisp–it takes almost any dish to the next level!

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 3-4 servings

Pesto Pizza {with roasted red pepper, tomato and roasted corn}

Ingredients

  • 1 lb whole wheat pizza dough (I used Trader Joe's brand), at room temperature
  • 1-2 tbsp cornmeal
  • 1 batch ricotta pesto
  • 6-8oz freshly shredded part skim mozzarella
  • 1 red bell pepper, roasted and chopped
  • kernels from 1 ear roasted corn
  • 2 roma tomatoes, sliced
  • heavy pinch oregano
  • pinch pepper

Instructions

  1. Preheat oven to 450. If using a pizza stone, leave it in the oven for 30 minutes. Sprinkle cornmeal over a sheet of parchment paper. Place dough on parchment paper and roll into desired shape. Alternately, use your hands to stretch it out into desired shape, then place on parchment paper.Transfer to pizza stone or baking sheet and bake for 10 minutes.
  2. Remove from oven and evenly spread pesto over the pizza. Top with cheese, corn and sliced tomatoes. Sprinkle oregano and pepper on top.
  3. Bake until crust is cooked throughout and cheese is bubbling, about an other 15-20 minutes. Let stand for 5 minutes, then slice and serve.

3 Cheese Apple Cranberry Pizza

I don’t know about you, but my taste buds totally change in the summer time.ย Most of my favorite foods (other than fro yo which is 100 times better in the summer) are hot and cheesy, and just don’t sound good when it’s 115 outside.

Well, this pizza is still hot and cheesy, so it wins for taste, but it is also fruity and refreshing which is perfect for the summer heat!

Confession: My favorite pizza used to be the kind that got delivered. Greasy, drippy Pizza Hut or Dominoes pizza was a staple in my diet, and something I continued to crave until I realized that pizza didn’t have to be off limits. That was like the best day of my life–when I started eating pizza again. Maybe I should be embarrassed by that?

Oh, whatever, I don’t care–I LOVE PIZZA!!! And I am now head over heels for making my own pizza, and how ridiculously easy it is! You just put whatever you want on top of some dough…

Then toss it in the oven!

Taaaaaddddaaaa!

3 Cheese Apple Cranberry Pizza

yield 6 servings

  • 1 package refrigerated whole wheat pizza crust
  • 3/4 cup fat free ricotta cheese
  • 1/4 cup nonfat plain Greek yogurt
  • 2-3 tbs unsweetened almond milk
  • 1 tbs fresh rosemary leaves, finely chopped
  • 1 tbs balsamic vinegar
  • 1/2 cup part skin mozzarella
  • 1.5 oz herbed goat cheese, crumbled
  • 1 apple, thinly sliced
  • 1/4 cup dried cranberries

Directions:

  1. Spray a medium-large cookie sheet with nonstick spray, then roll dough out using a rolling pin to fill out the sheet.
  2. In a small bowl, whisk together ricotta, Greek yogurt, milk, rosemary, and balsamic vinegar. Spread evenly onto rolled out dough, then top with mozzarella and goat cheese, followed by apple slices and dried cranberries.
  3. Cook according to instructions on the prepared pizza dough package.

French Onion Pizza

Trader Joe’s whole wheat pizza crust, WHERE HAVE YOU BEEN ALL MY LIFE?!?!?!

Why, yes, I would like some of the most delicious pizza ever made by me at home in about 20 minutes. Thanks for the help TJ’s!

So a couple of weeks ago I told Steve that I wanted to make french onion grilled cheese sandwiches. I was so excited about this brilliant idea. Obviously no one has ever done that before. Then the next day pretty much every popular food blogger out there stole my idea. Not cool, people. They clearly read my mind, and took my brilliance to claim as there own. Suffice it to say, I didn’t make those sandwiches.

Instead, I made pizza. Delicious, sweet oniony, garlicy pizza that I wanted to scarf down in one sitting. I seriously can’t believe it’s taken me this long to make my own pizza! I already have approximately 500 more pizza ideas that I want to create now. I may have a problem, but once you try it, you will see! You will be hooked, and there is no turning back!

French Onion Pizza

yield 6 servings

  • 1 package refrigerated whole wheat pizza dough (I used the Trader Joe’s kind, and would highly recommend it!)
  • 2 medium red onions, chopped
  • 2 cloves garlic, finely chopped
  • 1 tbs + 1 tsp olive oil, divided
  • 3-4 tbs beef broth, divided (you could also sub veggie broth to make it vegetarian)
  • 1 tbsย balsamicย vinegar
  • 1/2 cup freshly grated part skimย mozzarella cheese
  • 1/2 cup freshly grated gruyere cheese
  • freshly ground pepper

Directions:

  1. In a large pan over medium heat, cook onions and garlic in 1 tbs olive oil and 1 tbs beef broth. Season with pepper and cook until onions are browned and caramelized (about 15 minutes).
  2. Spray a medium cookie sheet with nonstick spray, then roll dough out using a rolling pin to fill out the sheet.
  3. In a small bowl, whisk together 1 tsp olive oil, 2-3 tbs beef broth, and 1 tbs balsamic vinegar. Brush onto rolled out dough, then top with cooked onions and garlic, and cheeses. Top with extra ground pepper if desired.
  4. Cook according to instructions on the prepared pizza dough package.

Nicole’s Birthday @ Pizzeria Bianco

If you live in Arizona, and maybe even if you don’t, you’ve probably heard of Pizzeria Bianco. Several reviews call it the best pizza in the United States. It is a tiny little restaurant in downtown Phoenix, and they are known for their delicious, wood oven baked pizzas, and their outrageous wait times. I’ve heard up to 4-5 hours!! And people wait. There’s a bar next door that I’m sure gets a ton of business as people go through multiple bottles of wine waiting for their chance at some pizza.

I had tried to get a reservation there for my birthday, but was told you need to make them about 1-2 months out (YIKES!!). Also, they only make them for parties of 6 or more. For Nicole’s birthday, we made a plan pretty far out in advance, that we would brave the wait times and finally get to try this place.

I want one of these in my house. I'm counting on Lance to make that happen. Nicole's husband has magical powers. Like building ovens, fixing electricity, and changing light bulbs. Yes, I do find changing a light bulb magical. I would be too lazy to even consider it until I had to get out the flashlight app on my phone.

Oh look, my favorite food! Maybe they should create a race special to end right out front and at the end, instead of a medal, they just give you a loaf of bread. A girl can dream...

To our surprise, we were seated immediately! Apparently 6pm on a Tuesday night is the time to get your pizza fix, friends! I was pretty impressed with their fancy glass coke bottles.

It was really nice to get to know some of Nicole’s friends! They were super awesome and fun (obviously, because awesome people keep awesome company ๐Ÿ˜‰ )

I have no idea who that crazy is with the cute husband.

We all ended up ordering a different pizza, and I have to say, none of them disappointed!

Steve and I shared this one. It's called the Rosa and has rosemary, pistaccios, and red onions. It was soooo flavorful!! It was like my tastebuds were having a party like that little rat in Rattatouie!

Nicole's pizza. I know it had ricotta cheese and arugala. It was also super delicious, but I liked mine better ๐Ÿ™‚

Lance's pizza....it had....meat. So descriptive, I know. I didn't taste it, but he liked it!

I don't remember who ordered this or what it was, but it looks good!

And the winner issss....! Oh yes, that is my pizza again.

Everything was delicious. I seriously could not get over how bold the flavors were. I don’t think I would wait 4 hours, but I would absolutely go back again!

After dinner we took some pictures. I know, you’re shocked.

BBFFs. This could get awkward real quick if Nicole tells me this term is totally unacceptable and ridiculous.

Then we went back to Nicole’s house for dessert, which of course means I have an other recipe to share with you soon.

This birthday girl knows how to cut some brownies!

I had so much fun celebrating with Nicole and her friends! I feel so honored to be a part of her real life friends group, and to have such an amazing friend in my life!! Happy birthday Niole!!!

Blogger Meet Up @ Piestewa Peak & La Grande Orange

Saturday after our bike ride of near death, Nicole, Carolyn and I met up with Diana, Marisa and Estela for a hike at Piestewa Peak. After the bike ride, I honestly was not really in the mood to hike anymore, but once we got going, I stopped being lame and started to enjoy myself. I’m no expert on hiking, but this one seemed…nice? You know, like a nice uphill walk with cacti ๐Ÿ™‚ Haha, if you want to actually hear anything legit about hiking, you should just go to Diana’s blog because she’s basically an expert. In fact, she even knows all of these weird hiking rules–did you know there were rules??? Like she knew what to say to all the people we passed, and talked about things like right of way that I didn’t even know existed on a mountain!

After the hike, we hopped back on our bikes and headed to La Grande Orange where we met up with Emily, Megan and Stacey. You better believe after a 30 mile bike ride I was ready for some wine! Emily and I split a bottle of pinot.

As soon as we sat down, the manager sent out an appetizer for us to sample. Whooohooo, I think it was my first special foodie blogger treatment! And all thanks to Nicole for slipping that into an email to the manager ๐Ÿ™‚

Guac, salsa, and pimento dip. All super delish!

Emily and I also split a salad with oranges, goat cheese and avocado (that I inhaled before it even occurred to me to snap a photo) and a pizza with goat cheese, tomatoes, roasted corn and avocado. Ummmm, yum.

OMG!!!! It's real pizza!!!! Probably my favorite food, but I very rarely eat it, unless it's at home and all skinnified. This was ahhhhmazing.

They even had gluten free crust!

Carolyn got the same pizza on the gf crust. I almost wished I would have ordered mine that way because I love a thin and crispy crust!

Then I insisted we take funny pictures. Naturally.

YAY!!! I got Emily to agree to a silly picture!!!

After an amazing evening, Nicole’s husband Lance was kind enough to pick us (and our bikes) up @ LGO, and then we convinced him to that a Yogurtology stop was a necessity.

Husband of the year award--picking up his wife and her 2 crazy friends that were silly enough to bike from Mesa to PV.

Oatmeal cookie, salted caramel and butterfinger with graham cracker, butterfinger and nutella on top. I usually stay away from the candy toppings, but after the riding and the drinking I totally caved, haha.

SUCCESS!!!! Except, apparently Lance was zoned out during my lecture about how snapping a photo at any moment in time where it looks like I may have a double chin is unacceptable and grounds to end our friendship forever. Buuuuttt, we were all in the air, so I am posting my second and third chins for the world to see.

And my chins make an appearance here too, but this picture cracked me up. I don't know what I'm doing or why Nicole is a Charlie's Angel, but I find this picture to be pretty awesome.

I can’t say enough what an awesome time I had!! I’m so excited for the new AZ Bloggers Network, and thanks so much to Emily & Nicole for setting it up, and to Nicole especially for putting this whole meet up together!

Happy Half Birthday to You

In case you weren’t aware, I love to celebrate. Anything. Everything. All the time. I get that from my dad. I remember growing up, we would celebrate my 1/2 birthday, 1/3 birthday, 9/10 birthday, you name it. It even goes down to 7/8 of a decade and crazy things like that. Thursday was my dad’s 1/2 birthday, but I was in rehearsal so his celebration had to wait until last night. I called my dad to see what the plan was and he asked if I was on the no carb diet (aka the dark ages when I avoided carbs like the plague–don’t do it, trust me) and I laughed and said “I’m on an ALL carb diet!” No carb stands a chance against me. Especially the night before my long run. He got so excited for pizza, so I suggested getting Papa Murphy’s and bringing it back to my place. I love their deLITE crust, it makes me feel not so guilty about pizza eating ๐Ÿ™‚

I got the Mediterranean chicken and a veggie and cooked em up along with some roasted green beans and onion.

Have you tried sriracha on your pizza?? I put this stuff on everything, but it is especially good on pizza!

I also did some baking, but I can’t share too much yet, because I loved what I made so much that I decided to nix my original idea for the blogger cookie swap, and make a little variation of these instead. But I have to offer a sneak peak ๐Ÿ˜‰

I had to send them all home with my dad because they never would have lasted over 24 hours in this house!

My dad, Steve, Hermano and I enjoyed our dinner, watched Who Framed Roger Rabbit and then Hermano won at Life. I came in second. I hate not winning. In fact, I’m still slightly bitter. Watch out, Hermano.

I still have embarrassing childhood stories to tell. You better think twice before you try to beat me in a game!

It was really nice to celebrate, but stay in and relax and play games. Maybe I’m old, but 9 out of 10 times, that’s what I’d rather do ๐Ÿ™‚ Happy half birthday dad!!!

So Much Coffee

Every time I wake up early, Winston stays in bed and stares at me with the saddest longing eyes like he’s saying “Mom, please don’t go. Come back to bed and snuggle with me.” Yes, I legitimately cuddle with my dog in bed. You are free to judge me. It won’t stop me. I got up at 5:45 to meet Kara for an early morning run around the lake. I love this route. Each lap is almost exactly a mile, slight hills, adventurous travels through the apt complex, nice scenery and of course, the ducks!

This time we must have encountered them 3 or 4 different times and each time they angrily quacked at us like they were pissed that we were interrupting their important waddle time. Those ducks crack me up. We finished 3 miles with a 9:55 average pace. Whoot.

Talk about negative splits! My first mile is always soooo slow. It’s like it takes my body the entire mile to get warmed up and ready to actually run. I need to work on that my next week day run. Tomorrow is a rest day because Friday we are running 6 miles!! Every long run makes me equally nervous and excited. New challenges, new accomplishments! After our run, we headed to Starbucks for water and iced coffee. I got my usual: Grande SF caramel iced coffee with soy, light ice (light ice=MORE room for coffee!) I also ordered Steve a coffee to take back to him, but then I got home and this happened

Second time in a week I’ve tried to surprise him with coffee and he had the EXACT same idea. Ironically there were no days in between where either of us got each other coffee. Steve laughed and said “We need to coordinate or something.” I don’t know, looks like we’re pretty in sync to me! Two iced coffees hanging out in my fridge, soon to become one ๐Ÿ™‚

After our I showered and got ready, I met the other Kara (hair Kara) at Forever 21 for some shopping. The new-ish one in AZ Mills is HUGE and I’d been wanting to go. I got a pair of shorts that are about 10 years too young for me, a super cute emerald green shirt that I didn’t even try on because I loved the color so much annnnnnd, the most exciting part, an ALADDIN SWEATSHIRT!!!!! I saw it and new I had to have it since we open on Friday (get your tickets, peeps–these kiddos are amazing!) I will take pictures of the new clothes (including my super awesome pumpkin shirt I bought at Target for $10 to be festive) once I have Steve around to take actually good pictures.

After shopping I had to make a super annoying trip to the tmobile store because my battery full on died–like unable to be brought back to life died. Soon my over heating phone will kill this battery as well and then MAYBE they will give me a new phone that actually works. By the time I got home I was soooo hungry and wanting the fastest lunch possible, so I took out this frozen pizza I bought at TJs a while ago.

I jazzed it up with some crumbled red fat feta cheese and sriracha on top, but I was so hungry I didn’t want to wait for the oven to preheat. My oven seriously takes years. It’s annoying. So I set it to burn broil and cut the cooking time almost in half. Well the burn button did it’s thing and I ended up with a pizza that was cold in the middle and burnt on the outside. I’m an awesome cook, can’t you tell?

Well, like I said, I was ready to gnaw my left arm off hungry, so I put it in the microwave for 40 seconds and then ate it anyway. It was not great my friends, but not awful. It did the trick. I would buy it again for an easy meal, but even cooked correctly, I don’t think it would have been anything too fantastic. Alright, off to get some life errands done that I’ve been neglecting, then off to work. Have a good day everyone!

Pizza and wine

Helllllooo, friends! Long time, no blog. I have had the craziest week. Basically, the month of August was pretty dead work wise,which is a big part of what inspired me to really put a lot of energy into the blog. I wasn’t doing much of anything productive and was pleasantly surprised by the feeling of productivity and channeling of my creativity that came from cooking and posting a lot. Then all of then sudden September hit, and I started something like 6 new classes and rehearsals for a show all in one week! It feels great to be busy again, but it does mean I don’t have the time to cook as much as I’d like. Luckily, it isn’t affecting my work out/gym class time!

Thursday, I tried out my new bike seat again in hopes that it wouldn’t fall off this time.

 

Luckily, it stayed on this time and definitely made a difference! I can’t say that sitting on the bike is comfortable or anything now, but it is definitely less painful than before! Unfortunately, while my bike seat stayed on, when I took my left foot out for unilaterals, I apparently placed it in the exact wrong spot, spilling the half unused contents of my venti Starbucks water cup. Embarrassing and hard to clean up. Oy!

Yesterday I got done with work at 4–Hallelujah! It’s my one off night probably for a while, so Steve, Jason and I went over to my mom’s for dinner. Of course, there was wine.

 

Hank picked out one of the most delicious bottles of wine I’ve ever tasted! The guy at Trader Joe’s recommended it. It was a sparkling pinot grigio and tasted like champagne! This girl loves champagne and now I can get the same taste from a >$10ย  bottle of wine–yes please!

For dinner, we picked out pizzas from the new Papa Murphy’s that opened right down the street. I’ve always loved Papa Murphy’s–I only wish that they had a whole wheat crust. Instead, I settle on the thin crust. If you’ve never had it before, essentially you go, pick out your pizza (they have a million different kinds) and they give it to you put together, but uncooked, then you take it home, pop it in the oven and feel like you’re having a home cooked meal without any of the work! Genius. I got to choose the flavors and I went with the Mediterranean DeLite and the Thai chicken DeLite both on the thin crust.

 

I had a small slice of each and they were both delicious. It was really hard to pick a favorite, but I think if I had to, I would say the Thai chicken! The whole night was exactly what I needed. I’ve been so busy, it was nice to just relax with the fam!

This morning, Steve brought out the new toy he got for Clementine (for some reason Winston almost never plays with toys), and started playing around with the shutter speed on his camera to catch her in full cuteness.

Tonight Steve and I are celebrating (a day early) our 6 month wedding anniversary! The last 6 months have flown by and I am excited to celebrate with him–we look for any and all excused for celebration ๐Ÿ˜‰ Have a good weekend everyone!

Labor Day=More Lavosh Pizzas!

Happy Tuesday after long weekend! I don’t know about you, but my weekend seemed like a whirlwind and right now I am enjoying some much needed time in a comfy chair at home watching trashy reality tv (ANTM–I can’t help it, I love it).

Yesterday Steve and I brought mi hermano (ever since Jacob started taking Spanish in school and insisting that he is a “double threat”, we only refer to each other by hermano and hermana) over to Jason and Nacho’s for Labor Day. Nacho volunteered to make his delicious baked artichokes (YUM), I volunteered to make lavosh pizzas (and of course dessert), and hermano’s mom (yes our family is confusing–we have the same dad) offered to go to Serranos and pick up queso ๐Ÿ™‚ On the way over we completed a madlib that begam “Hello. Hermano pickle here to tell you about the jo mama.” I love madlibs.

As soon as we got there, I got to cookin! 4 different lavosh pizzas. I made way too much food. And ate too much, but it was worth it :O) I tried a small slice from each pizza and was lured in by the huge bag of kettle chips sitting on the counter–whoops!

In order of my favorite to least favorite ๐Ÿ™‚

Bruschetta Lavosh Pizza

yeild 8 slices

  • 1 whole wheat lavosh crust
  • 1-2 tomatoes (vine ripened or roma), chopped
  • 3-4 basil leaves, chopped
  • handful spinach leaves
  • 1/4 cup part skim mozzarella, grated (friendly reminder that cheese is ALWAYS better when you grate it yourself!)
  • 4 oz herb goat cheese
  • 1/4 cup balsamic vinegar, reduced (I didn’t use any sugar)

Directions

1) Preheat oven to 450

2) Place lavosh crust on a foiled cookie tin and crisp in the oven for 3-4 min

3) Top with tomatoes, basil, spinach and mozz

4) Use a spoon to dollop goat cheese in the center of where each slice will be

5) Bake for 5 minutes

6) Slice and plate

7) Drizzle with balsalmic reduction and enjoy!

Mexi Lavosh Pizza

yeild 8 slices

  • 1 whole wheat lavosh crust
  • 1/2 tomato (vine ripened or roma), chopped
  • 1/4 cup black beans, drained and rinsed
  • 1/2 jalapeno, chopped
  • 3 tbs chopped onion
  • 3 tbs chopped red pepper
  • 3 oz reduced fat cream cheese, softened
  • 2 tbs taco seasonings
  • 1/4 cup part skim mozzarella, grated

Directions

1) Preheat oven to 450

2) Saute jalapeno, onion and red pepper with non stick spray and 1/2 tbs taco seasoning

3) With an electric mixer, combine cream cheese and remaining taco seasoning

4) Place lavosh crust on a foiled cookie tin and crisp in the oven for 3-4 min

5) Evenly spread cream cheese/taco seasoning micture

6) Top with tomato, onion, jalapeno, red pepper, and mozz

7) Bake for 5 minutes

8) Slice and enjoy!

Spinach and Artichoke Lavosh Pizza

yeild 8 slices

  • 1 whole wheat lavosh crust
  • 2 handfuls spinach, chopped
  • 1/3 cup artichoke hearts, chopped
  • 2 ounces reduced fat cream cheese
  • 1 ounce low fat ricotta cheese
  • 1/4 cup part skim mozzarella, grated
  • 1 tsp lemon pepper
  • 1 clove garlic, chopped

Directions

1) Preheat oven to 450

2) With an electric mixer, combine cream cheese, ricotta cheese, lemon pepper, garlic, spinach and artichokes

2) Place lavosh crust on a foiled cookie tin and crisp in the oven for 3-4 min

3) Evenly spread cream cheese mixture

4) Top with mozz and extra spinach if desired

5) Bake for 5 minutes

6) Slice and enjoy!

The last one was an imitation crab + spinach. We were all luke warm about it. It was good, but just didn’t compare to the other three, so I’m gonna leave it off from here. If you really want the recipe, ask and I will share.

I also brought the sweet potato cupcakes, and they were a hit!
