But let’s be honest here…I am totally weird, and nothing like other humans, and I wouldn’t have it any other way. My dad taught me to be myself, the importance of birthdays, and how to be the most sentimental human on the planet. I’m not entirely sure I’m grateful for that last one…

My dad doesn’t eat meat, so he would actually hate this recipe (sorry dad…), but I figured I’d pick a Father’s Day dish that most dads would appreciate, and most guys I know love a good burger. Maybe I was a man in a former life?

Buffalo Turkey Burgers

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 4 burgers

Serving Size: 1 burger

Buffalo Turkey Burgers

Ingredients

    For the buffalo ranch dressing:
  • 1/2 cup nonfat plain Greek yogurt
  • 1 tbsp buffalo sauce (more or less depending on desired spiciness)
  • 1/2 tsp ranch seasoning
  • For the burgers:
  • 1 lb lean ground turkey (93-96%)
  • 2 tbsp buffalo sauce
  • Extras:
  • 4 whole grain buns (whole wheat, brown rice, whatever you like)
  • 1/4 cup crumbled bleu cheese
  • 1/4 cup finely chopped celery
  • Mixed greens (about a small handful per burger)

Instructions

  1. To make the buffalo ranch sauce, combine yogurt, buffalo sauce and ranch seasoning in a small mixing bowl. Set aside.
  2. In a medium bowl, combine ground turkey with 2 tbsp buffalo sauce. Form into 4 equal-sized patties. Press your thumb down into the center of each patty to create a small indent.
  3. Grill over medium heat until completely cooked throughout, about 5-7 minutes each side.
  4. Transfer burgers to buns, and top each burger with about 2 tbsp buffalo ranch sauce, a handful of greens, and a tablespoon each of bleu cheese and celery. Serve immediately. Leftover burgers and sauce can be stored in separate airtight containers in the fridge for 5-7 days.

Notes

Taste the sauce before serving--if it is too spicy, add more yogurt. If it is not spicy enough add more buffalo sauce.

Extra lean ground beef may be substituted for ground turkey.

Buns may be omitted, and burgers may be served salad style if desired.

Drink & Dish: Blueberry Pancakes {with video!}

I know that no one is *perfect*, but I’d have to say my mom is pretty darn close. So today, rather than tell you about how awesome the pancakes are (they are awesome, and make sure you check out the video at the end for all my pancake secrets!), I have compiled a list of a few of the many reasons I love my mom.

1. My mom is the best listener. Any time I have a problem, she says all the right things. I can call her at any time of day and I know I can count on her to be my confidant, and give me A+ advice. She is a social worker, so in addition to her 28 years (gross, I’m old) of experience, she’s also legitimately educated in advice giving and people skills.

2. She is hilarious and totally weird. When I was little, she would do this weird clap-in-patterns thing. I seriously don’t know how else to even explain it, but I was always so embarrassed. Now I see all my weird little quirks, and realize how alike we are. I appreciate that she taught me to be silly, and to be myself. Now I love all of her little oddities. They make her unique, and she wouldn’t be my mom without them.

3. She is my biggest cheerleader, and also my biggest advocate. I love the positive support and encouragement I get from my mom, but it is the times when I see her stand up and fight for me that I am taken aback. My mom, rarely angry, occasionally turns into a real mama bear, and I can see her fight to protect me. I don’t care how old I am, I will always appreciate feeling protected, and I will also always need to hear her tell me “Good job. I’m proud of you.”

4. She is the most patient woman I have ever met. It doesn’t run in the family. I simultaneously admire, and am in awe of her patience. You know when you want to grow up and be just like your mom? Yeah, I still feel that way, and I keep hoping one day it will happen.

Whole Wheat Blueberry Pancakes

Prep Time: 20 minutes

Whole Wheat Blueberry Pancakes

Perfectly fluffy whole wheat and vegan blueberry pancakes are perfect for any brunch occasion!

Ingredients

  • 2 tbsp milled flax seed
  • 6 tbsp water
  • 2 cups whole wheat pastry flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • dash salt
  • 2-3 tbsp brown sugar*
  • 2 cups unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. In a small bowl, whisk together flax seed and water. Let stand for 5 minutes.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt and brown sugar. Gently mix in flax mixture, almond milk, and vanilla, stirring until just combined, then fold in blueberries. Let stand for 10 minutes.
  3. Preheat griddle or large pan over medium-low heat, and spray with nonstick cooking spray. Pour 1/4 cup batter for each pancake. Cook until top forms small bubbles and bottom is golden brown, about 5 minutes. Flip and cook for an additional 3-4 minutes, until golden.

Notes

*I used 2 tbsp brown sugar, but you can easily use 3 if you like your pancakes on the sweeter side.

I’ve always been all about the cheese enchiladas. And quesedillas. Pretty much anything with cheese is sure to be a winner in my book. Did I ever tell you about how when I was younger I would “snack” on blocks of cheddar cheese? In fact, just this morning, I told Steve that cheese was my favorite food group.

I’m pretty sure the abundance of cheese is what fuels my love for Mexican food, which is why it’s often difficult for me to find healthy options. No matter what I say, I cannot convince myself that 11 servings of cheese is “healthy”. It’s really sad. If you can help convince me, I would greatly appreciate it. 😉

Luckily, this dip has the perfect amount of cheesy goodness, but with a lighter touch. Most of the creaminess comes from nonfat plain Greek yogurt and the avocado–the avocado is like my secret weapon. I put it in on a whim, and it ended up totally making the dish! It’s like if you took an enchilada and stuffed it with guacamole–I mean, HOW COULD THAT BE BAD???

This dip is super simple with only a handful of ingredients, and it comes together in minutes. It’s perfect for any party or get together, and the bold flavors and creamy texture are sure to be a hit with whoever you’re serving!

Chicken Enchilada Dip

Cook Time: 10 minutes

Total Time: 10 minutes

Chicken Enchilada Dip

Green chile enchilada dip with creamy avocado, goat cheese and Greek yogurt. Perfectly creamy and cheesy, with a lighter twist.

Ingredients

  • 10-12 oz cooked chicken, shredded (I used the meat from 1 rotisserie chicken)
  • 4 oz goat cheese
  • 1 cup nonfat plain Greek yogurt
  • 1/2 pint enchilada sauce
  • 1 avocado, pitted and skin removed
  • Shredded cheddar cheese for topping*
  • Black olives and green onion for garnish, optional
  • Baked corn chips for serving

Instructions

  1. Combine chicken, goat cheese, yogurt, enchilada sauce and avocado in a medium pan over medium heat. Stir constantly until all ingredients are melted and combined.
  2. Transfer to your serving dish (make sure it's oven safe) and top with cheddar cheese (I used about 1/3 cup). Broil until cheese is browned and bubbly.
  3. Top with olives and onion if desired. Serve with chips or veggies.

Notes

*I usually use a reduced fat cheddar cheese, but it doesn't melt quite the same. For photos, I used full fat. If you're concerned about appearance, I would encourage a full fat cheese, but if you're purely concerned with taste, reduced fat will still taste great!

You guys know how insanely obsessed with birthdays I am, right? I jump on any chance to celebrate, and I consider birthdays the day you celebrate that people you love are in your life. My normal birthday message goes something like “Happy birthday! I’m glad you were born!”

The beginning of April is crazy birthday time! Within a week, Steve, Nicole and her husband Lance all have their birthdays. I’m the odd man out, but that’s probably a good thing, because I have a total sharing problem when it comes to my birthday. I reallllllly like attention (in case you haven’t figured that one out yet), and I don’t want to share my thunder with anyone.

I don’t know what my problem is.

Oh, and I guess I should talk about the cake mix, eh? To put it concisely (because lord knows I’ve talked enough in this post), I can’t believe I ever bought a boxed cake mix! This was so much easier than driving to the store! I know sometimes we like to have a little bit of cake mix on hand for when other recipes call for it–well friends, you just put some together, and have it ready in the pantry. It’s so easy. And when I baked it into cupcakes, all I did was mix everything together in one bowl (all you have to add is applesauce, almond milk and vanilla!), and my cupcakes were done in NO TIME! Not to mention, they domed up so beautifully!

DIY Funfetti Cake Mix

Prep Time: 5 minutes

Total Time: 5 minutes

Serving Size: 1/24th mix

Easy, homemade, whole grain, vegan funfetti cake mix in less time than it takes to run to the store to buy a box.

Ingredients

  • 2 1/2 cups white whole wheat flour
  • 1 1/2 cup sugar
  • 1/4 cup corn starch
  • 2 tsp baking powder
  • small pinch salt
  • 1 1/3 cups Jimmies sprinkles

Instructions

  1. Whisk all ingredients in together in a large bowl. Store in an airtight container for up to 3 months.

Notes

To bake cupcakes, simply add 2/3 cup applesauce, 2 and 1/2 cups unsweetened almond milk, and 1 tbsp pure vanilla extract to mix. Stir until combined. Evenly divide the batter between 2 dozen cupcake tins and bake @ 350 until a toothpick in the center comes out clean, 20-25 minutes. You can also bake into 2 8-9" rounds, or one large sheet cake, just adjust baking times accordingly.

So, today is the first day of Passover (it started last night, because we’re weird, and have to start holidays at sundown), and I should be here with a recipe for matzo ball soup, or macaroons, but instead I’m bringing you totally leavened Easter brunch scones. I’m sorry mom and dad.

To be fair, I did  eat my fair share of those things last night, and agreed to go over the story of Passover by watching the Rugrats Passover. I much prefer it to the 8 hours Seders we used to have where we never got to eat dinner until, like, 10 p,m. You know me, I get grumpy if you hold out on the food. 😉

Anyway, I’ve been reallllly wanting to make scones, and I’ve had almond meal scones on my recipe ideas list for quite a while now (I keep a running list in the note app on my iPhone–it’s awesome!), and when Nicole and I were deciding what to make for our Easter brunch Drink & Dish, I knew scones were the way to go.

Okay, that’s a lie. I wanted to make bagels from scratch with flavored cream cheese. I was so sure this would be brilliant. Then Nicole reminded me that perhaps trying to cram the entire bagel making process into a 5 minute video was not the best idea. This is why I’m glad I don’t do this alone. Oh, and the drinks. The drinks also make me glad to have the world’s most perfect partner in crime.

I absolutely LOVED making these scones! In fact, I made them a few times. The first time they came out far too thin and crunchy to be considered a scone. However, my friends loved those crunchy ones! The texture is easy to play with here–they don’t rise very much, so if you want closer to a cookie/biscotti, them leave them thin and let them get nice and browned. However, for scones, I wanted thick and fluffy. Well, the second time was the charm–all I had to do was keep the dough nice and thick, and they baked up perfectly soft, tender and thick. These perfectly tender scones are topped with my favorite part–the sweet, drippy, lemony frosting with tons of vanilla bean specs. They are so pretty!

These scones only require 1 mixing bowl, and they are done start to finish in about 20 minutes. Perfect for a hectic morning brunch! You can make them the night before, or whip them up quickly in the morning. They work for almost all food allergies, and are a nice healthy treat to balance out all of those chocolate eggs.

And for an added bonus, we uploaded one of our sound checks. We always sing when we work together, and have started singing a lot of our sound checks because…ummm I don’t know. We’re weird. But we found this one especially humorous, so we thought we’d share it for your enjoyment.


Lemond Almond Meal Scones

adapted from Elena’s Pantry

yield 8 servings

For the scones:

  • 2 cups almond meal
  • dash salt
  • 1 tsp baking soda
  • 1 tbsp corn starch
  • Zest of 1 lemon
  • 1/4 cup unsweetened almond milk
  • 2 tbsp honey or agave (or liquid sweetener of your choice)

For the glaze:

  • Heaping 1/2 cup powdered sugar
  • 1 tsp vanilla bean paste (or vanilla extract)
  • 2-3 tbsp fresh lemon juice (about 1/2 medium lemon)

Directions:

  1. To make the scones, preheat oven to 350. Line a medium baking sheet with Silpat or parchment paper. Set aside.
  2. In a medium bowl, whisk together almond meal, salt, baking soda, corn starch, and lemon zest. Add almond milk and liquid sweetened. Mix until combined.
  3. Roll dough into a large ball and press down into a 1-1 1/2″ thick disk. Cut into 8 equal pieces. Do not separate. Bake as if for 9-11 minutes until golden and set. Transfer to wire racks to cool completely.
  4. To make the glaze, place powdered sugar in a medium mixing bowl. Add vanilla bean paste. Slowly squeeze in lemon juice mixing constantly until you have reached your desired consistency. Again, make sure to only add a small amount of juice at a time–a little bit goes a long way.
  5. Use a pastry brush to evenly brush glaze over cooled scones. Serve immediately, or store in an airtight container for up to 1 week.

Drink & Dish: Vegan Shepherd’s Pie {with video!}

Do you guys celebrate St. Patrick’s Day? I’ve never really done much, but green is my favorite color, so I do enjoy an entire holiday dedicated to it. 😉 I really like to get holiday themed pedicures (my bank account doesn’t, but that’s an other story…), and I always get really excited to get something green in March!

To be honest, I had no idea what the heck people even eat for St. Patty’s Day. After some brain storming, Nicole suggested shepherd’s pie, but I didn’t even really know what went inside the thing. I knew it was meat and potatoes, but that was about it.

I did some research, swapper the meat for lentils, swapped the mashed potato topping for a sweet potato puree, and all of the sudden I had a delicious, hearty, and filling vegan shepherd’s pie.

Can we talk about how shepherd’s pie is the hardest thing ever to photograph? I felt like every single photo I took just looked like vegetable mush. In fact, it took me 2 takes (one during testing, and one during filming) to get even a handful of photos that I liked between the two.

I should also mention that this makes a LOT of food. Like, I hope you have a big family, and are looking forward to healthy left overs because it will last you forever, and only gets better the next day! I tested this recipe out on a Tuesday, ate the leftovers all week long, and then made it TWICE for filming. I’ve pretty much been eating nothing but shepherd’s pie for the last week and a half.

In fact, I can’t believe I’ve gone this long not eating this regularly–savory, rich veggies topped with creamy, sweet potatoes? It just screams the makings of a perfect dinner!

Vegan Shepherd’s Pie

yield 10-12 servings

  • 3 large sweet potatoes
  • 1 cup low sodium vegetable broth, divided use
  • 1 tbsp corn starch
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 3-4 cloves garlic, chopped
  • 3 large carrots, peeled and chopped
  • 2 large squash (zucchini or yellow), sliced
  • 1 lb cooked lentils
  • 1 cup frozen peas
  • sea salt, freshly ground pepper, and thyme for seasoning
  • cashew cream for topping (optional)

Directions:

  1. To make the sweet potato puree, roast sweet potatoes at 400 degrees for 1 hour. Cool slightly, then remove skins and transfer to a blender. Season with salt and pepper and blend until smooth.
  2. In a small bowl, whisk together 1/2 cup vegetable broth with corn starch. Set aside.
  3. Heat olive oil in a large pot or dutch oven over medium heat. Add  onion, garlic, carrots and squash. Season with salt, pepper and thyme (I used a heavy pinch of each), and cook until tender, about 10 minutes.
  4. Add lentils, peas and vegetable broth/corn starch mixture. Add an extra 1/2 cup  vegetable broth. Cook until all ingredients are heated throughout stirring occasionally, about 10 minutes.
  5. Transfer to a large casserole dish (or individual serving dishes). Evenly spread sweet potato puree on top.
  6. Broil for 20 minutes. Top with cashew cream if desired. Store leftovers in an airtight container in the refrigerator for up to 1 week.

So for a hot second, I was pretty sure that after our first video, Nicole and I would be crazy to ever try this crazy idea again.

I mean, I’m pretty sure we made every mistake one could possibly make when embarking on this kind of adventure. We forgot to plug in our microphones, we exported the video incorrectly, and ended up with a video that looked like when Mike TV goes into millions of pieces to be transmitted to the television in Willy Wonka and the Chocolate Factory.

Then there was the editing, which took us five hours. That is the amount of time it took us to run a marathon when I was injured. We also both decided this was more difficult.

But then you guys were so kind. You gave the most supportive and kind response, and you didn’t even make fun of the visual quality of our video. You actually took 6 minutes out of your day, and watched us take this big step. I was beyond nervous, and I wasn’t sure I even wanted anyone to watch, but this awesome blogging community has been nothing but positive and supportive. So with newfound respect for everyone who has ever posted a vlog or video on the internet, we made a list of things we wanted to improve, and set off for round 2.

And I’m so glad we did! Yes, there is still tons to work on (how the heck do I figure out the right amount of perkiness, and personality when I’m in front of the camera???!), but I am still really excited to share the second episode of Drink & Dish with you guys.

Whether or not you are a Valentines Day person, I feel like the love of red velvet is pretty universal. And if you don’t like red velvet, honestly what is even happening inside your taste buds?!

Red Velvet Whoopie Pies

I’ve always wanted to try making red velvet whoopie pies. I always imagined them with a white chocolate cream cheese frosting. Then, I was shopping for ingredients and, almost instinctively, I grabbed a jar of marshmallow fluff. The rest is history, because I am over-the-moon obsessed with this filling. It’s perfect for cakes, cupcakes, whoopie pies, spoons, and fingers. Light and fluffy with the sweet hint of white chocolate–I diiiie.

When the cakes came out of the oven, I almost couldn’t believe it! They were more beautiful, soft, and fluffy than I ever imagined they could be. It was one of those happy kitchen moments where you want to jump up and down, and sing from the rafters (OMG, why did I not do all of those things on camera? Silly Ari…) about that very special thing you’ve just created. I’m glad Nicole was there to experience it with me. Hermano said they were probably the best thing I’ve ever made, and I might agree. I am pretty darn proud of them, and I just want you all to make them, like rightthissecond, because I am pretty sure you will love them too.

Red Velvet Whoopie Pies

adapted from Better Homes and Gardens

yield 1 dozen large whoopie pies

  • 2 cups white whole wheat flour
  • 2 tbsp unsweetened cocoa powder
  • 1/2 tsp baking soda
  • dash salt
  • 1/2 cup unsweetened applesauce
  • 1 cup light brown sugar, packed
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup reduced fat buttermilk
  • 1 oz red food coloring

For the filling:

  • 8 oz reduced fat cream cheese, softened
  • 4 oz marshmallow fluff
  • 1/4 cup white chocolate chips, melted and cooled
  • 1 tsp vanilla extract
  • 1 cup powdered sugar

Directions:

  1. Preheat oven to 375. Line 2 large baking sheets with a silpat or parchment paper. Set aside.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda and salt. Set aside.
  3. In a stand mixer (or large mixing bowl), beat together applesauce and brown sugar until well combined. Add egg and vanilla. Continue beating until fully combined.
  4. Alternate adding flour mixture and buttermilk to applesauce mixture starting and ending with dry ingredients. Scrape down the sides and continue beating until combined. Add food coloring, and continue mixing until dough is red throughout.
  5. Use a small cookie scoop sprayed with nonstick spray to transfer dough to prepared baking sheet. Bake for 7-10 minutes. Let stand for 3-5 minutes, then transfer to a wire rack to cool completely.
  6. To make the filling, beat cream cheese in a medium mixing bowl until fluffy. Beat in marshmallow fluff, followed by white chocolate and vanilla. Slowly, beat in powdered sugar.
  7. Top flat side of half of the whoopie pies with filling, then cover with remaining pies. Store in an airtight container in the refrigerator for 5 days.
